Really? Does mold need moisture? The boat is directly on the Gulf - with around 85% humidity these days. I'd say it's got moisture.
i think its just the angle of the photo maybe, or it gives the authentic feel of eating while sailing :P
I took the photo myself and if you stand behind the ship, it is definitely off-center. Look at the center support beam.
